No time to have breakfast? Do you just grab a toast on your way out? Or just skip it completely? In an earlier survey, it was found that three out of every four (72%) Indians do not have nutritionally adequate breakfast and one out of every four actually skip their breakfast altogether.
Not a good move, people! Breakfast is the most important meal of the day, and to help you give it the right start, celebrity Chef Ranveer Brar is sharing his easy-to-prepare recipes.
Corn Flakes Bean Soup
Preparation Time: 20 mins
Serves: 2
Ingredients
- 1 cup Kellogg's Corn Flakes Original and the Best
- 1 cup kidney beans boiled & lightly pounded
- 6 cups vegetable broth
- 1 medium diced onions
- 1 tomato
- 1 tbsp tomatoes paste
- 5 cloves garlic
- 1 red bell pepper
- 1 teaspoon salt
- 3 tablespoon olive oil
- 1 tablespoon parsley
- 1 teaspoon oregano
- 1 teaspoon roasted ground cumin powder
- 2 bay leaves
- 1 small stick cinnamon
- 2 tsp red chillies powder
- 1 tsp cracked black pepper
Method
- In a sauce pan, heat Olive Oil
- Add cumin, bayleaf, cinnamon & crackle
- Add minced garlic & sliced onions, cook for 5 mins
- Now add Kellogg's Corn Flakes, beans, diced red peppers, diced tomatoes & sauté
- Add tomato paste, cumin & red chillies powder & continue cooking for next 4-5 mins
- Now add stock & let it simmer slowly
- Season with salt and pepper after 15-20 minutes, remove bayleaf & cinnamon
- Finish with cracked pepper, crushed Kellogg's Corn Flakes, Oregano & chopped Parsley
Muesli & Sundried Tomatoes Home Pressed Paneer
Preparation Time: 60 mins
Serves: 2
Paneer Ingredients
- 1 cup Kellogg's Muesli
- 6 cups milk
- ⅓ cup sundried tomatoes
- 2 tbsp chopped jalapenos
- 2 tbsp fresh basil paste
- 1 tsp cracked pepper
- 1 tsp Salt
- 4 tbsp kasundi mustard
- 2 tbsp refined oil
- 4 tbsp vegetable mayonnaise
- Paneer Steak Method
- Boil the milk with Kellogg's Muesli
- Add lemon Juice & gently stir
- Add chopped sundried tomatoes, jalapenos, basil & cracked pepper
- Stir & strain on muslin cloth, hang this muslin cloth. Bundle it up for 30 mins
- Keep this mass on a perforated plate & place a heavy weight on top for 1 hour
- When the Paneer is firm cut into steaks & marinate with mustard
- Char it on coal or in a non-stick pan
- Serve with mayonnaise mixed with kasundi mustard
Oats Risotto
Preparation Time: 20 mins
Serves: 2
Risotto Ingredients
- 2 Cups Kellogg's Oats
- 1 small onion chopped
- 5 cloves garlic
- 1 tbsp celery chopped
- 2 sprigs thyme
- 2 tbsp white wine
- 3 tbsp parmesan cheese
- 4 cups vegetable stock
- ½ cup sundried tomatoes
- 8 nos olives
- Salt
- 2 tbsp olive oil
Risotto Method
- Heat olive oil & sauté thyme & garlic for 2 mins
- Add onions & celery, sauté
- Add diced sundried tomatoes & crushed olives & sauté
- Add Kellogg's Oats & sauté till it gets coated with fat
- Now add stock & simmer till the time Oats gets cooked yet has a bite(do not overcook)
- Fold in cheese, remove thyme & serve with salad
Salad Ingredients
- 12 nos cherry tomatoes
- 4 tbsp olive oil
- 1 lime
- 80 gms arugula
- ⅓ tsp sea salt flakes
- 2 tbsp almonds sliced & toasted
- 8 nos parmesan shavings
- 20 gms basil fresh
Salad Method
- Cut cherry tomatoes into half
- Toss aragula & cherry tomatoes with olive oil & lime juice
- Serve on top of risotto
- Sprinkle sea salt, almond flakes
- Garnish with parmesan shaving, fresh basil & 1 tspn of balsamic reduction(reduce balsamic vinegar on slow flame & cool it down to form a thick syrup/ reduction)
