Do chocolates make you go weak in the knees? Then hold on, you are in for a unique chocolatey surprise by a Swiss chocolate company. Before you jump to dreaming about a new variant of dark or milk chocolate let us break it to you – it is gulaabi this time around. Yes, Barry Callebaut – a Swiss chocolate manufacturer – has made public its plan to unveil a ruby pink chocolate.

Made with ruby cocoa beans, this new upcoming pink chocolate will have no artificial colours or additives but will instead have a natural pink colour. It will be fourth in line after dark, milk and white chocolate which have been wooing chocolate lovers since forever.

As for the flavour, get ready for a whole new experience. As per the makers, the new chocolate will be neither bitter nor sweet but will be ‘an intense sensorial delight’, imbuing a ‘tension between berry fruitiness and luscious smoothness’.

Not So Fast

The ruby pink chocolate, made from special cocoa beans from the Ivory Coast, Ecuador and Brazil, and launched in Shanghai on 5 September, will take some time (anything between six to eighteen months) before it hits the market. The beans, however, belong to the same family of cacao plant that is the origin of the chocolates we have been eating all this whis.

Ruby pink, which has created quite a stir among chocolate lovers, remains yet to be approved by the Food and Drug Administration (FDA).

What Makes the Berry Chocolate Unique?

According to a news release by Barry Callebaut, “ The Ruby bean is unique because the fresh berry-fruitiness and color precursors are naturally present. The cocoa beans are sourced from different regions of the world. The bean has a specific set of attributes, which Barry Callebaut managed to unlock through an innovative process that took many years to develop.”

It further adds:

Ruby chocolate has been tested and validated through extensive consumer research run by independent global research agencies Haystack and Ipsos in the UK, US, China and Japan.

Sounds intriguing, tempting and interesting, right? Well, wait a few months and you may have a new favourite chocolate on your hands. As they say, some things are worth waiting for.
